Healthy Lunchbox & After School Snack

Great for school lunchboxes and after school snacks, these cookies/biscuits last all day in school bags for after school activities, and will still get eaten!
Ingredients
1 cup wholemeal spelt flour or any plain flour
1 cup oats (quick oats are more finely ground and make it easier to eat)
2 tablespoons sugar
2 tablespoon butter, melted
1 big tablespoon honey
1/2 teaspoon bicarb soda/baking soda
1 tablespoon ground linseeds - optional
Directions
- Preheat the oven to 180C/350F.
Prepare a cookie tray and lightly rub the base with butter to stop cookies sticking in the oven - Get a bowl - Mix spelt flour, oats and sugar in a bowl.
- Grab a saucepan and have a wooden spoon ready - Melt butter first, then add honey and when nearly melted, add bicarb soda. The saucepan mix will start expanding. Stir quickly with wooden spoon over the heat for a few seconds.
- Pour the melted mix into the dry bowl and stir.
The mix will still be dry, so add a few drops of water as you go until the mix becomes sticky and mixed together. - Sprinkle in the ground linseeds and mix in with your hands.
Super important is to look at the size of your lunchbox cavity to make sure that your cookie can fit into it.
Roll into a ball the size of the cookie you want. To fit into lunchboxes, use a big teaspoon size of mix. If the mix gets sticky on your hands, wet your hands and no more stickiness! - Use the back of a teaspoon to flatten the balls into a cookie shape. Dip the spoon in water if it keeps sticking to the cookie dough.
- Cook for 10 minutes, then put take off tray and put on cooling rack.
After they have cooled down, put them in the freezer and grab them when you want!

- Remember to check the size of your lunchbox cavity to make sure that your cookie can fit into it.
